The philosophy that permeates every Claudio Quarta cellar is guided by research and sustainability. Every effort is made to mitigate the environmental impact, intrinsic to winemaking, which is known for its high water consumption and CO2 emissions.

Despite careful agricultural practices, with some plots under integrated pest management and organic farming, wine production still entails a considerable release of CO2.

Here's what we do to counteract this emission and balance our environmental impact.

These choices reflect Claudio Quarta's vision, believing that agriculture and craftsmanship should evolve towards a healthier and more sustainable model, contributing to a future that leaves a positive imprint for generations to come.

To simultaneously pursue sustainability and innovation, we have chosen Coral Wine, an underwater cellar located off the azure shores of the island of Pag in Croatia.

The goal is to refine our wines in a unique and natural environment without compromising it. Each bottle is placed in special baskets submerged in the crystal-clear waters of the Adriatic Sea. The baskets are suspended to avoid impacting the marine floor, and periodic control dives are carried out to monitor their safety and assess the organoleptic evolution of the bottles.

After initial experimentation with the immersion of a few bottles of Moros Salice Salentino Riserva and Taurasi Riserva for 9 months, whose quality was collectively confirmed during the comparative wine tasting event "Coral" vs. "Classici," curated by AIS Lecce at Vinitaly 2023, we have submerged a broader selection of wines scheduled for harvest in June 2024.

These new wines, including Jacarando Blanc de Blancs, Puddinghe, and other premium selections, will be available for purchase in wooden packages that compare the wine evolved in the cellar with that evolved in the abyss and adorned with algae and marine sediments.

This project reflects our commitment to creating distinctive wines, environmentally friendly and capable of offering a unique sensory experience.
